Banana Oat Pancakes

I am a huge fan of breakfast!! It's not only the most important meal of the day, but happens to be one where I enjoy pretty much everything about! Eggs, bacon, waffles, hashbrowns, benedicts, pancakes! I could go on...I have however, been trying to continue to find ways to incorporate healthier alternatives to the most loved foods. So I am constantly looking for and trying new recipes! This recipe that I found is from the Fixate Cookbook put together by Autumn Calabrese.  She is the creator of the 21 Day Fix and this is a Fix-approved recipe.They were SUPER easy to make and cooked up in no time.  It made about 8 fair sized pancakes so I was able to save some and we can eat them over the course of a few days! And they were a hit, no one had anything left on their plate- basically I suggest you try them as soon as you can! I used banana and strawberries on mine because that's what we had, you can add any fresh fruit that you want!Banana Oat Pancakes1 cup unsweetened almond milk2 eggs1 large ripe banana1 tsp. pure vanilla extract1tsp. baking powder, gluten free1/2 tsp. ground cinnamon1 dash sea salt2 cups dry old-fashioned rolled oats, gluten free4 cups fresh mixed berriesDirections1. Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in blender; cover. Blend until smooth.2. Heat nonstick skillet, lightly coated with spray, over medium-low heat.3. Pour 1⁄4 cup batter into skillet for each pancake; cook for 2 to 3 minutes, or until bubbles form on top of the pancake. Flip with spatula; cook for an additional 90 seconds.
